Zucchini are available year-round and are at their best in summer, especially when freshly picked from your own garden. It’s a delicious source of potassium, vitamin C, vitamin A, folate, and fiber, and packs a nutritious punch for just 19 calories per cup. Seasoned simply with olive oil, garlic, salt and pepper, zucchini is delicious on the grill, says Rachael Hartley, RD, of Columbia, South Carolina. “I like to make extra and use the leftovers for pasta, salads and sandwiches during the week.”
